Pine Nut and Parmesan Salad

Trying to eat healthy doesn't really work for me if I have to eat boring, plain meals. So I was never a fan of salads because to me that meant, a few dry lettuce leaves with a chopped up tomato.

But then I started playing around with ingredients, dressings and jazzing things up a bit. And I have a new found love for them now. They're so refreshing, light and can be full of flavour and texture!

A couple of weeks ago I wrote about one of my favourites (click here to have a look), and today I want to show you another.


A couple of handfuls of spinach, watercress and rocket (Approx 30-40g)
2 salad tomatoes
10 olives
2 slices of toast
1 tablespoon of olive oil mixed with 1 tablespoon of balsamic vinegar
Handful of pine nuts
2 teaspoons or Parmesan cheese

Mix the spinach, watercress and rocket with chopped tomatoes, torn up toast and olives. 

Then drizzle with balsamic and olive oil dressing and sprinkle with Parmesan and pine nuts.
